This week's question is what is my favorite summertime meal?
I love, love, love Pistachio Chicken salad (it is in the South Beach Diet Cookbook and is to die for!). Once you have this, you will dream about it, it's that good!
You take chicken b00bs and press them in finely ground pistachio nuts with a bit of pepper in them. Then fry them for about 5 - 10 minutes in olive oil, to partially cook them. Pop them in a 375 degree oven for 20 minutes to finish cooking.
Meanwhile,in a blender smoosh the crap out of an avocado (pit and skin removed!) with some olive oil (probably 1/4 cup - I'll check the cookbook to verify this!) and a tablespoon of water, some grated white onion (much sweeter than other onion), and the juice of a whole lime. Whirl it until it is smooth.
While you are doing this, scramble fry some white onion (I like to do one large or 2 medium onions up, chopped coarsely).
Place your favorite lettuce (as much as you like) on a dinner plate. Remove chicken b00bs from the oven, slice into bit sized slices and arrange on lettuce. Top with the avocado lime dressing (or if this doesn't tickle your fancy, the dressing that you love!), and the lightly browned onions.
Prepare to be addicted (I swear that pistachios are laced with crack!).
No Knitting today ... I am a cranky pants (it's hot and I am tired of the humidity).
